Chili Night on a Chilly Night

Last night I made a big pot of spicy chili and a pan of cornbread. The perfect supper for the first day of true winter chill.


Damie's Chili Beans

Beans - whether old or new, canned or homemade
(although, we generally use old homemade beans)

Dump - 1 can chopped tomatoes
Or chop your own and add some salt

Chop - Bell Pepper
Onion
Cilantro
Carrot
Jalapeno

Optional - Some type of meaty substance, true meat or not

Season - Ketchup and brown sugar
Yes. Ketchup and brown sugar.

You want to taste a bit of tang and a bit of sweet, so make sure you've added enough.

Stew until carrots are soft.

Personally, I like to eat mine with a piece of cornbread buried in it. Cottage cheese is also good. The picture above has some grated cheddar on it. I know a few degraded souls who dollop some sour cream on top. Use your imagination and find your chi.

  1. Sour cream all the way. And cornbread doesn't go IN the chili, it goes NEXT to it, on a plate, with butter and honey on top. Ohhhh yummy.

    And I couldn't help but add an "li" to the end of your post. "Use your imagination and find your chi.....li." Bahaha! Okay, sorry.
